halibut or cod fillets (fairly thick),
3 Medium tomatoes chopped,
3 Medium onions finely sliced,
10 fl oz (300 ml) Coconut milk,
5 tbsp (75 ml) Patak′s Vindaloo Paste,
1 tbsp (15 ml),
Plain flour,
3 tbsp (45 ml) Oil

Heat the oil and fry the onions until a light brown. Make a paste with the coconut milk and flour and gradually add this to the onions. Add the tomatoes and Patak′s Vindaloo Paste. When the sauce starts to bubble, reduce the heat and add the fish, spoon the sauce over the fish and cook for 10 minutes. .
